Peat is a fossil material of vegetal origin formed in the protohistoric age in damp, cool environments. The raw material has a rough, spongy appearance and is rich in water and in calcium, potassium and sodium salts. It can be found almost at surface level and is easy to extract. That is why peat was the coal of the poor until one century ago. They used it for heating their homes and with the smoke from its combustion they smoked the foods so that they would last longer. Today, also grappa, like other internationally renowned noble distillates, unites with peat smoke to create a special and highly original product. An innovative production that incorporates, however, all the wealth of an age-old tradition.
